Caffeic acid (CA) is an organic phenolic compound synthesized by all plant species found in substances such as coffee, wine, tea, propolis, etc. This organic compound and its derivatives show antioxidant, anti-inflammatory and anticarcinogenic activities. The anticarcinogenic activity of CA is mediated via suppressing the generation of reactive oxygen species (ROS), decreasing the angiogenesis in cancerous tissues, blocking STAT3 (Signal Transducer and Activator of Transcription 3) signaling and suppression of MMP2 and MMP-9 (collagen IVmetalloproteases) activities in tumors.
