        Background

        Cashews contain a high level of proteins that are considered heterologous proteins to the human body. In individuals with compromised immune function, consumption of cashews may stimulate abnormal immune responses, leading to allergic reactions. Cashew-induced allergic reactions may include tachycardia, throat swelling causing airway obstruction, fainting, dizziness, and loss of consciousness. Even the ingestion or inhalation of trace amounts of cashew can result in anaphylactic shock.

        Cashew is an important tree nut allergen and contains three major allergenic components: Ana o 1, Ana o 2, and Ana o 3. The major cashew allergens were recombinantly expressed in Escherichia coli, and the immunological activity of the recombinant proteins was identified using cashew-allergic sera. Using an indirect ELISA method, recombinant antigens were coated onto microtiter plates, reaction conditions were optimized, and cashew-allergic positive and negative sera were tested to establish a component-resolved diagnostic method for cashew allergy.
